    Ok just tested the water after lights out and the pH was 8.3

    I'd say that pretty good, if you can keep an eye on it for a few days, measuring at the same time everyday, you should be able to get it straight. Just aim to get it stable around that pH and you good to go.

    You cannot accurately measure the pH of RO/DI water, there are too few ions to measure and the water is very unstable.

    RO/DI quickly takes on the pH characteristics of whatever it is added to or is added to it and should have very little to absolutely no effect on the displays pH. You can basically assume it is neutral.
