    Temp
    PH
    Alk
    nitrates
    nitrites

    less important for now but possibly related to PH values are Mag and Calcium.

    Your tank is still cycling. I went for 4 months before I put anything in my tank.
    Go slow, let it grow.

    ya agree, you should not have any nitrite at all if its fully cycled. It would be a bad idea to throw new "live" rock in it as anytime you place a rock that is out of water, something on it would be dead by the time it reach your tank. It will force your tank go on a mini cycle.

    I would have a high concern on your anemone, do you have any way to move it to a establish tank?
