    Once you go all-grain its hard to go back... just so much more variety when you can build your own grain bill.

    I 100% agree about the Belgians- my favorite too! I love the complexity and I'm not much of a hop fan, though every once in a while I like something hoppy.

    I made a Christmas beer two years ago that was a Tripel with Peaches, Plums, and spices- it fermented so vigorously it blew my airlock out of the bucket lid. Luckily, it didn't get infected because it was just churning CO2 out of the airlock hole and it turned out great!

    I doubt you can get it, but Troegs (PA Brewery) has a beer called Mad Elf that is my absolute favorite. That is a Tripel brewed with Honey and Cherries- simply awesome.
