Garlic treatment question

I had been using pure minced garlic, but the kind i used i can't find anymore. I got some other minced garlic but in the ingredients it says garlic,water,phosphoric acid?? what should i be looking for? the other stuff had no ingredient label just said pure minced garlic. can i use this stuff for soaking food ? everything looked fine to me till i got to the acid part..

 

Umm all I know is it is bad for your teeth, too much should degrade them, but it should be fine, you should add some HUFA maybe

Is that something i'd get from my LFS or grocery store?

 

the stuff i have been using for a few weeks says "citric acid" i think or something like that, as a preservative. i did a little research and read that i just needed to watch for a pH drop. i tested a couple times but didnt see any change but my alk is steady at 12dkh so not sure if i would have noticed anyways.
