they will eat uneaten food in the water column as they filter it, thereby reducing nitrates- they don't actually eat it. At least that is my understanding of it. I have had a few different types before. They work I guess, but should really be treated as pets rather than filters. I use to spot feed mine by finely grinding flake into like a slurry with some water and then turkey basting it to them. Kept them alive for awhile. When they do finally die though they really foul up a tank.
