I'm sure if you ask Peka, she didn't feed just frozen brine.
The recommended food for seahorses is frozen mysis shrimp, with Hikari mysis being the most reported used as I've found, and PE mysis being used for larger seahorses. Frozen mysis have more nutrition needed for the seahorses.
Live brine shrimp are great after they have been enriched with Dan's Food with/without Beta Glucan (seahorsesource.com) for a once or twice a week feeding.

Well, I'm not exactly sure what you are asking. I guess I'm too old for the new spellings and sentence structures.
However, I'll give it a try as you are asking about feeding dishes but I'm not sure what you know and don't know about them.
First off, new seahorses can be stressed from the move and from the acclimation to the new water, with new specific gravity and pH sometimes.
That should settle itself in a day or so.
For feeding, some people use feeding dishes to place the frozen mysis in, with a location in the tank that won't just blow the food away, and the seahorses may come to the dish to feed.
Feeding dishes have been many things, from inverted clam half shells, to small dishes, to DIY dishes made/moulded to whatever the keeper has in mind.
I've tried various things and as long as it's something that holds the food and allows the seahorses easy access to snicking the food, you should be OK.
In my case, some of my seahorses will eat from the dishes, but many don't, so I no longer bother with the dishes and just squirt the thawed and rinsed food into the water column and they hunt the pieces down.
Remember also, that seahorses can be VERY picky about the pieces they choose to eat, leaving much behind to be removed before decaying, whether the uneaten is in a dish or on the tank bottom or caught up in rock work or decor.

First of all, some seahorses will eat pieces of mysis, but many won't. You could try it though.
Hikari mysis are the most appropriate sized mysis used for seahorses until fully adult when some are given PE mysis.
Did Beth say they were trained to eat from a dish?
If she didn't, then you will have to spend time to see if you can train them yourself, or, do as I do, just put the mysis into the water column and let the water motion carry the myis close enough to the seahorses that they become aware of it.
You can use a turkey baster to stir up any that sit on the bottom so that they can feel more like they are eating a natural food.
It's best to count the number of mysis you put in, so when you remove any uneaten ones, you know just how many they actually ate. Many times mine eat and I don't see them eating.
