what will happen if the rocks aren't very porous?

 

less room for the beneficial bacteria that makes it "live rock"
Generally you want the most porous rock possible to give you the greatest amount of surface area possible.

 

I would really advise against the peppermint shrimp. I kept two and they caused me nothing but trouble. Destroyed some of my corals and were very agressive. Pick up a cleaner shrimp instead. Peaceful creatures and they will rid your tank of parasites. Great personalities too.
