I got some zoas a few weeks ago and today i noticed that one of the groups has some brown stringy thing about 1-2 inches long is coming out of the mouth of a few of the polyps. It starts out small and grows then the releases from it.

Its not "poop". Its zooxanthella - the intracellular life corals harbor that are responsible for photosynthesis. It was either most likely swapping it out for a more desirable strain, or is stressed.

I read the wiki article. I dont know if it is coral bleaching. This happened about 8 hours ago and the polyps are still "in bloom" and they still look as good as they did before this happened.
    I dont know.

It doesnt have to "bleach" at all. Like I said, they can expel them to take in a different strain that you may already have in your tank. It happens quite frequently. I would say 50% of the shrooms/zoos I add do it a week or two after adding to my system.
