I do a 10 to 15 gallon water change once a week with my 55 gallong discus tank. I take turns on which side of the gravel gets vacumed and I pump the water back in slowly to keep from scaring the fish too much.
www.simplydiscus.com has great forums for discus tanks.

I do have a full grown angel with my 4 discus and it isnt a problem unless the angel is laying eggs. There is a lot of talk about not keeping them with angels as angels can sometimes harbor a parasite that can kill discus. Mine didnt have the problem but who knows in your situation.

5% change shoudl be good enough.. I take it your water is crystal clear rite? if it is.. 5% will do. slowly pour it in.. without disrupting the fishes.
