My fairly new Scarlet Shrimp seems to have a hurt leg and the lower part of it missing. He/she doesn't seem to be distressed or even notice it as he/she still uses to climb on my rock. Should I be worried?

It should grow back within the next molt or two.

Yep they grow right back. I wouldn't be too worried, but I would watch out to make sure nothings picking on it.
