You could use wires with larger AWG without any issue. Just have to make sure it fits into the connector or onto the area you are soldering......

Underneath the actual potentiometer knob, there is a nut that secures it to the faceplate.
A 25W Weller soldering iron is okay but optimal would be about 40W. Since you already have it, give it a go. The key is really to keep the solder...
No problem! :) It usually takes a few days for it to break in once you have it in saltwater. Good luck!
Yes it should be fine. Once in saltwater, it will produce more fine bubbles.
Freshwater is the problem.
