I am very surpirsed how stable my saltwater tanks have been,

Your aragonite will act as a buffer and continuously add calcium etc. to your water like a time release vitamin!
Yes that is true of sumps being connected. You will have benefits as well as pitfalls, though I think the benefits will outweight the negatives!
