Yea the fish poop still gathers there whether there are plants or not. The plants don't consume that stuff and so it is still necessary to vacuum your gravel when doing a change. But you should be able to mostly vacuum AROUND the plants and not disturb them much. Besides a little disturbance to them isn't the same as disturbing live corals for example.
