I found this in an article which basically said that nitrates an phosphates are actually in the animals than the products used to make frozen or freeze dried food.

+1 to this. The binders and other additives can have a dramatic effect on the amounts of phosphates and nitrates in a given amount of food.

I got the info out of REEF Hobbyist Mag third quarter 2010 volume 4. Other great articles there also.

Flake and pellet foods contain the most amount of nitrates and phosphates. When using frozen foods it is best to drain the food to remove the water/liquid the food is frozen in before adding to your water. This will help to reduce the amount of nitrates and phosphates entering your water.
