I agree that their was another underlying event that caused you Tang to become sick, thus not being able to fend for itself. However, the fact that your Tang's death was attributed to the hermits is a mute point as that wouldn't be the case, I don't think!

Default Hermits Crab Cannabilism

It needs to be said that a fish does not have to be terribly sick to be taken down by hermit crabs. I had two hermit crabs, each the size of a child's fist. One looked slightly lethargic for a day or so and a short while after that I looked in the tank to see only a pile of empty crab claws. Yes, the one ate the other.

Sounds like you had a different species of hermits than the original poster. Blue leg hermits don't get that large.
