As for the handling and moving of corals, IMO it is better abd safer to move them by hand either with gloves or barehanded. The reason for this is that you can have better control of what you are doing and also don't run the risk of hurting it with a hard surface such as with tongs.
Regarding the plate coral, as AMCARRIG suggested use an iodine dip to hopefully contain the problem.
