Default emerald crab turning white

I have had an emerald crab in my tank for about 4 months, and for the last few weeks he his carapace has been slowly turning white. It gets a variety of food, i see it eat and move around quite a bit, and all of my other inverts (hermits, peanut worms, and snails) are healthy. Ammonia and nitrites are at 0 and nitrates stay between 5-10 ppm. Anyone have any ideas?
